Styling Harvard Recipes: Easy Blender Muffins

Once again, I found myself looking to bake today so I decided to go with a simple favorite in our house — Peanut Butter Banana Chocolate Chip muffins. These muffins are super simple to make and are prepped right in your blender!

What I love about these easy blender muffins is you only need a handful of ingredients, they’re gluten free and are about 100 calories a piece. Plus they take less than 20 minutes start to finish!

Ingredients:

1 cup peanut butter
2 large eggs
2 ripe bananas
2 tbsp. honey
1 tsp. vanilla
1/2 tsp. baking soda
Chocolate chips

  • Preheat oven to 400°.
  • Combine ingredients in blender and blend until well mixed.
  • Pour batter into greased muffin tin
  • Add chocolate chips to each muffin
  • Bake for 8-9 minutes depending on the size of your muffin tin

Let cool for a few minutes and enjoy warm or at room temp. This is great to do for a make ahead breakfast that you can grab and go in the morning.
